Bay Scallops
Since native U.S Bay Scallops suffer from depletion, most Bay Scallops come from aquaculture farms in China. In China growers produce their Bay Scallops via suspension culture (lantern nets or pen nets) and are dredged.

Mild and sweet, Bay Scallops are cork shaped and are creamy in color. Texture should be firm and moist.
